Track guys chime in

Just watched this Dave Moss Video on handlebar ergonomics. Looked like a great idea to make my K12RS fit me a little better, until I realized the angle of the bars is fixed and can't (easily) be changed so that my knuckles are parallel with the grip as per Dave. So the questions are:

1. Is this only important for racing and not much help for normal road application?
2. Would bar-backs fix this? Is it worthwhile doing?
3. After examining my grips, it looks like I could rotate my bars outward by drilling another hole for the lock pin. Is that a bad idea?
4. Anything I'm missing here?
